Excitement builds as David Higgs and Gary Kyriacou bring Marble restaurant concept to Cape Town
In a move that has sent ripples of excitement through the culinary community, renowned chef David Higgs, in collaboration with visionary entrepreneur Gary Kyriacou, has brought the acclaimed Marble restaurant concept to Cape Town.
Known for its innovative approach to fire-driven cuisine, Marble has successfully carved a niche in Johannesburg, and, now, the duo has embarked on an exhilarating new chapter in Mother City.
Marble, which first opened its doors in Rosebank, Johannesburg, has been celebrated not only for its daring menu but also for its vibrant atmosphere, offering diners an immersive experience where each dish reflects the essence of South African culture and hospitality.
The venture has been a culmination of Higgs' culinary expertise and Kyriacou's smart business understanding, which together have consistently delivered exceptional dining experiences that entice food enthusiasts and critics alike.
The decision to establish a Marble franchise in Cape Town comes at a time when the city is rapidly becoming a culinary hotspot.
Known for its diverse food scene that seamlessly blends local flavours with international influences, Cape Town is the perfect backdrop for the restaurant’s signature offerings.
Head chef Matt van Niekerk shared: “The concept of live-fire cooking may not be new anymore, but the way we do it at Marble is always a fresh experience.
“That’s what excites us about Cape Town.

The heart of the restaurant’s menu features the iconic Grillworks, a captivating display that marries fire with culinary finesse.
Guests can indulge in signature starters such as snoek pâté served with magwinya and lamb and beef tartare adorned with pickled waterblommetjies.
The main courses showcase a combination of celebrated dishes, including the wood-fired Chalmar ribeye, and innovative new offerings like mussel paella and line fish complemented by burnt leeks and roasted fish bone sauce.
Located in the historic Union Castle building, the restaurant’s interior is a masterpiece crafted by interior director Irene Kyriacou and design firm Redecco.
The design brilliantly reflects Cape Town’s natural elements — wind, sea and earth —utilising floor-to-ceiling glass façades to create breathtaking views that span 360 degrees.
The artistic vision is further enhanced with bespoke art, sophisticated textures, and features inspired by local culture.
“The space evolves throughout the day,” Irene explained. “Whether it’s lunchtime, sundowners, or an evening experience, the design adapts to Cape Town’s moods —from stormy days to vibrant summer sunsets.
“The outdoor terrace is an extension of the dining and bar area, designed to amplify the beauty of our surroundings without overshadowing them.”
Gary shared: “We see incredible potential in bringing Marble’s unique experience to Cape Town. While the concept has evolved slightly to reflect the essence of the Mother City, our commitment to delivering luxury through experience, quality, and intuitive service remains constant.
“We believe the restaurant will become a truly special destination.”
